Type 2 Diabetes is “Curable” — Success with Type 1 and Weight Loss

This is my first video on the Starch and Veggies YouTube channel, and is an introduction to what I’ll be sharing with you in upcoming episodes. If you have Type 2 Diabetes, you’ve probably been told you’ll be on medication, maybe even insulin injections, the rest of your life, because it’s incurable. That’s a bunch of bunk. In most cases, Type 2 Diabetes can be completely reversed, and usually very quickly.

I have Type 1 Diabetes, which means, barring a miracle from God, I’ll have to take insulin injections the rest of my life. Can a dietary change help? Are potatoes and corn bad for diabetes? Am I just doomed? Check it out.

Does Weight Loss Require Eating Less Calories?

Weight Loss Plate?For a very long time, it’s been “common knowledge” that, in order to lose weight, you must eat less food, or at least consume less calories. Is this the truth? Must you starve yourself to trim down? Are you doomed to a life of constant hunger, and to feeling like a failure when you binge?

Let’s consider the animal kingdom. Of all the creatures God has made, the animals in the wild eat as much as they please; and even the ones with an ample natural food supply don’t have a problem with weight. The only creatures who constantly struggle with their weight just happen to be human beings and the animals who live with them. Coincidence?

In the wild, animals eat their natural diet. Horses don’t eat bananas, and monkeys don’t eat grass. Lions don’t eat acorns, and squirrels don’t hunt down deer.

Humans, on the other hand, have become quite skilled at eating what we were not created to eat. In Genesis, we read that God gave man the fruit of the trees and the herbs of the field for food. It wasn’t until the Great Flood, when man would have starved and not been able to populate the whole earth due to the climate change and the reduced plant life (fruit trees, a major source of man’s original energy supply, didn’t regrow over night, and wouldn’t grow at all in many of the new climates), that God told mankind he could eat the flesh of animals.

That was not his natural diet. And when we eat things we aren’t biologically supposed to eat in large quantities over a long period of time, we start developing major physical problems.

But that’s  a really big topic, and we can come back to that later. What’s important in that train of thought is that in the beginning, God not only gave man lots of sweets and carbohydrate-filled treats, but He also told him to eat as much as he wanted.

In Genesis 2:16, God said, “Of every tree of the garden you may freely eat (except for the tree of the knowledge of good and evil).” In other words, “Eat to your heart’s content. No need to count calories.” So much for the popular belief that fruit makes you fat. Even after the fall, while we don’t see an account of the quantity of fruit consumed, we do know there was farming, and there are early records of various starches, including lentils.

After the Flood, we read the following in Proverbs 23:20: “Do not be among heavy drinkers of wine, or among excessive eaters of meat.” The word translated as “meat” literally means animal flesh. Does God just not want us to have too much fun? Ixnay on the ineway? Can’t have much wine, and can’t eat a lot of meat? Is God just mad at the Atkins and Paleo crowd? Well, just like all His laws, there are good reasons for them. Primarily, they are against His nature, and/or they cause us harm. So just like too much alcohol damages your body and mind, so too much animal flesh causes serious problems.

The same goes for milk. God designed milk for a growing baby. For a baby human, human breast milk is nutritionally perfect, is the perfect temperature, and creates a strong physically and emotionally healthy bond with the mother. The same is true for baby goats, cows, cats, and dogs. And all creatures wean their young at an early age. All, that is, except for humans. For the average human, weaning just means changing from a nipple to a cup. We don’t stop drinking milk. And it’s no wonder that approximately 70% of both children and adults, with or without realizing it, have some level of allergic reaction to lactose (milk sugar), because our bodies were designed to drink human milk as a baby, and then be weaned. It’s also no wonder that casein, the predominate protein in dairy products, has been proven to cause cancers, especially breast and prostate, since it was designed for baby cows, not adult humans; and, of course, it can cause weight gain.

It’s The Fat

Our bodies love turning carbohydrates into glucose, and they do so very efficiently. Fat, on the other hand, is more difficult to burn. So if you are eating enough carbohydrates to fuel your body, and you’re also eating excess fat (and we’ll cover the meaning of “excess” in just a moment), your body has no need to burn the fat and stores it away instead. In fact, you can tell which animals a person likes to eat by taking a sample of their body fat and running an analysis. If they like bacon, they’re carrying around pig fat. If they prefer chicken, they’re carrying around bird fat. If they eat at McDonald’s, they carrying around clown fat. Just kidding with that last one. The point is, the analysis of your body fat doesn’t identify rice, potatoes, or corn, only animal fat. “The fat you eat is the fat you wear.”

It is an inefficient process for the body to turn carbohydrates into excess fat. Aside from very unusual conditions, your body will store up to two pounds total fat produced from carbohydrates in the form of glycogen (energy stores), and the rest is burned off (thermogenesis). Your body is great at dealing with energy (calories) from plants, because that is what you were designed to eat!

What Is Excess Fat?

Based upon the diet God created us to consume, excess fat can be found in:

  • All meat, including chicken, fish, and eggs (even “lean” meats are relatively very high in fat).
  • All dairy products (low-fat is still relatively high in fat, and to make fat-free dairy, the amount of deadly casein is increased).
  • All vegetable oils (which can cause as much damage to your cardiovascular system as animal fats).
  • Over-indulgence in nuts and avocados (naturally produced in limited or hard-to-access amounts for a reason).

Don’t buy into the bro-science that says eating lots of fat is good for you. It’s not. It’s been proven not to be by numerous large-scale, long-term, peer-reviewed studies. And it’s not what the Bible shows us God created us to consume.

You Were Designed to Eat Plants

God designed you to eat plants. That’s the diet He gave us in the garden. That’s what we ate even after the fall. It was hundreds of years later that, primarily because of climate change, God introduced the carcasses and bodily fluids of animals as human dietary possibilities. And then He warns us in Proverbs 23:20 to not eat too much of it.

In a few remote places, some people today still need to eat animals to survive, because there are not enough edible plants to provide the necessary caloric and nutritional needs; however, most of us have access to so much plant-based foods year ’round that we do not need to consume the carcasses or bodily fluids of animals. And the less of it you eat (optimally none), the better off you’re going to be.

This is why a growing number of well-known doctors and nutritionists are proving that the human body does best on a whole foods vegan diet, and that any addition of flesh and dairy causes damage; the more that’s added, the worse the damage. To those of us who believe the Bible, this should come as absolutely no surprise. Regularly consumed, these substances cause heart disease, strokes, Type 2 Diabetes, arthritis, osteoporosis, and a number of other degenerative and autoimmune diseases.

Today, most of us eat meat and/or dairy for breakfast, lunch, dinner, snacks, and desert. It’s in everything. And just in case that’s not enough to make most of us overweight, we add vegetable oils. And when we start noticing that we’re too large, what do we do? Well, the popular answer is not to cut out what’s causing the weight gain, but simply to under eat. Keep eating the meat, the cheese, and the oil, just cut down on everything you’re eating.

But starving yourself does some really bad things.

  1. It can leave you without energy.
  2. It can cause more nutritional deficiencies than you already have.
  3. It often leads to binging, since God programmed us with a strong hunger drive for a very good reason.
  4. It damages your metabolism, and makes it very easy to quickly gain back every pound you lost and more.

On the other hand, consuming large quantities of whole foods plant-based carbohydrates does some really good things.

  1. Carbohydrates are the best macro nutrient for boosting your production of leptin, the fat-burning harmone.
  2. They give you good, long-lasting energy without stimulants.
  3. They provide your body with all the nutrition it needs (minus B-12), including protein, calcium, and fatty acids.
  4. They make it much easier to move your body and stay physically active.

Your cravings for meat and dairy and excess fat will quickly disappear (anywhere from 1 to 4 weeks), and you’ll find that you are tremendously satisfied with your potatoes, non-GMO corn, rice, beans, whole grain pastas and breads, fruits, and vegetables. And you’ll start to lose weight eating to your heart’s content.


If you have Type 2 Diabetes, you should watch your blood glucose levels very carefully! The fat you’ve been eating has clogged up your insulin receptors, which is why you have Diabetes. When you ditch the fat, your insulin resistance will quickly reverse itself. So if you’re taking insulin shots, you might consider stopping them immediately to keep you out of a diabetic coma. Most Type 2 Diabetics are able to go off all of their related medications within a few weeks, and never have Diabetes again (as long as they continue eating this way).

For Type 1 Diabetics (like me), watch your glucose levels very closely and reduce your insulin as needed.

Iced Oatmeal Cookies

No eggs, dairy, or oil, easy to make, and oh so delicious!

WARNING: These will not cause weight gain, and when eaten along with a whole foods plant-based diet, will help you lose weight, stop or reverse heart disease and Type 2 Diabetes, and lengthen your life. Also beware of their delicious taste.


  • 1-1/2 cups whole wheat flour
  • 2 cups rolled oats
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/3 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup warm water
  • 2 tsp Egg Replacer
  • 2 bananas
  • 2 cups brown sugar
  • 1/3 cup applesauce
  • 1 tsp vanilla

Preheat oven to 350 F degrees.

In a large bowl, mix the dry ingredients well.

In another container, mix the Egg Replacer with the water and whisk until frothy. (If you don’t have access to Egg Replacer, you can use flax meal instead.)

Mash the bananas in another bowl.

Stir in the brown sugar, apple sauce, and vanilla.

Mix well, then stir in the Egg Replacer (or flax meal) mixture.

Pour over the dry ingredients and mix until well-combined and moist.

Drop by spoon fulls (a 1 or 2 tbsp spoon works well, such as a coffee scoop) onto a dry non-stick backing sheet, and flatten slightly with a fork.

Bake for 12-15 minutes, until slightly browned.

Remove from oven and cool.


  • 1 cup organic confectioner’s (powdered) sugar
  • 4 tsp water
  • 1/4 tsp vanilla

Mix together until smooth, then start spreading it on the cookies right away (before it starts to harden). We also added some organic vegan sprinkles on top, immediately after the icing was in place.

If desired, you can replace the powdered sugar with date paste and omit the water.

Allow to harden for 2 – 3 hours, then enjoy!

The Price of Your Choices

price-tagYou can put what you wish into your body, but there will be a price, either good or bad. Consider the price. If you are willing to pay it, then partake. “It is not what goes into a man that defiles him.” If you’re NOT willing to pay the price, abstain.

Let’s start with two most people know; but keep reading, there are bound to be several things on this list you consume. Also note that the “prices” listed are not exhaustive.

CIGARETTES: Cancer, emphysema, and chronic bronchitis.

ALCOHOL: In more than minimal quantities — Cancer, liver damage, kidney failure, alcoholism.

MEAT, FISH, EGGS: If eaten in more than minimal quantities (not every day and certainly not every meal) — Cancer, cardiovascular disease, strokes, kidney stones, gall stones, Alzheimer’s, Chron’s, Type 2 Diabetes, arthritis.

DAIRY: Cancer, especially breast and prostate (especially low or non fat), ear and sinus infections, weight gain, and all the items listed in the previous item (milk is basically liquid meat).

OIL: Including olive oil — Weight gain, blood vessel damage, reduction in blood oxygen levels (also caused by meat and dairy).

RICE, BEANS, POTATOES: Weight loss (if overweight), increased energy, increased nutrient intake.

FRESH FRUITS: Weight loss (if overweight), increased intake of vitamins, increased hydration, higher level of natural energy, the normal effects of antioxidants including lower occurrence of colds, the flu, and other common ailments.

VEGETABLES: Weight loss (if overweight), improved blood flow, greater intake of vitamins and minerals, regular healthy bowel movements, overall greater health.

The last three items together also: reverse heart disease (including the early sign called “erectile dysfunction”), stop or reverse cancer, improve or cure arthritis, prevent Alzheimer’s, completely reverse Type 2 Diabetes (sometimes within a couple of days), heal Chron’s, improve M.S. and Lupis, and stop or reverse the majority of diseases those in developed countries who eat like Americans develop as a result of any of the first five items on this list.

Why Do Carbs Seem to Make People Gain Weight?

happy-pasta-catWhy do some people gain weight eating carbs? Is it because carbohydrates, such as pasta, corn, and potatoes, make you fat? Here’s the answer.

The body was designed to be very efficient. The easiest thing for it to do with fat is to store it as fat, while the easiest thing for it to do with carbohydrates is to burn them for energy.

When you eat fat (meat. dairy, and oil) without carbohydrates, your body doesn’t have the energy-producing carbs it needs, so it burns the fat instead. Sound good? Well, it’s not. The cholesterol does very naughty things to your body, and you’re likely to have serious immediate issues, such as constipation, fatigue, and headaches, as well as long-term issues such as cardiovascular disease and insulin resistance.

When you eat fat (meat, dairy, and oil) with carbohydrates, your body chooses the easiest thing to burn for energy — the carbs! And since burning the fat is much less efficient and not necessary, it stores it instead. Thus the weight gain.

When you eat carbohydrates (corn, rice, potatoes, or even heaps of whole grain pasta) without the fat (meat, dairy, or oil), your body burns the carbs for movement and internal processes, and, if you have extra calories from those carbs left over, your body burns them as heat (dietary thermogenesis, which, as a side effect, burns fat). It will also store up to two pounds total (not per day or per meal) as glycogen, which is energy for later. And since you’re not consuming added fats, the fat you’re wearing starts to melt away.

So there you have it. If you’re gaining weight on carbs, it’s not the carbs, it’s the fat you’re adding to them. Take away the rich foods and eat just the nutrition-packed starchy plants, and you can eat as much as you want, your food cravings will start to disappear (just like a drug addict who’s away from his or her drugs for awhile), and you’ll start to heal from excess body weight, diabetes (Type 2), arthritis, crohn’s disease, M.S., and many other diet-caused diseases we seem to think are just an unavoidable part of life.

Praying for Healing from Chronic Disease

“We really need to pray for Greg. He has Stage 4 lung cancer.”

“Yes. And don’t forget Amy. Her liver is almost gone.”

“Thank you,” says Greg as he lights up another.

“Yes, your prayers mean so much. Jesus still heals!” adds Amy as she opens up another bottle of Jim Beam.

This sounds silly of course, but it’s more relevant than you might think. Most of us have no idea what the food we eat is doing to us. Most of the diseases, and almost all of the chronic illnesses for which we pray, are caused by the rich American diet — cancer, diabetes (including Type 1 — did you consume cow dairy growing up?), arthritis, leukemia, osteoporosis, kidney stones, gall stones, tonsillitis, ear infections, appendicitis, coronary disease, strokes, Alzheimer’s — the list goes on and on — all of these are caused, the majority of the time, by the food we eat.

Does God heal self-inflicted disease? Yes, He often does. Especially when the people who are sick don’t know it’s the food they’re eating that’s killing them. But should we presume that if we choose to turn a blind eye to the truth about the food we eat, God will continue to heal the results? He might. But that just might be a foolish thing to assume.

Let’s take responsibility, just like we would give up drunkenness or cigarettes, and return to the simple, life-giving foods we were originally designed to eat. Leave the feasting on the rich foods from the kings’ tables for a rare celebration, or just leave them be like you’d forego an occasional drinking binge, and fill up on something good instead.

What should we eat?

Rice and Broccoli with Mashed Potatoes and Beans

004“Won’t you get fat eating all that starch?” Actually, I’m losing weight, feeling great, and getting loads of nutrition, everything my body needs to heal from years of unintentional dietary abuse.

Calories are not all created equal. Calories from fat are metabolized quite differently from the calories found in whole grains and starchy vegetables. In a diet like this, you’ll start to heal from Type 2 Diabetes (usually within a few days), arthritis, cardiovascular issues, and a host of other chronic diseases, all while eating as much as you want and being completely satisfied.

Rice: brown and black rice seasoned with curry powder, black pepper, hot sauce (optional), and a little soy sauce, with steamed broccoli mixed in.

Mashed Potatoes: red potatoes cubed and steamed for 15 minutes then mashed with black pepper, sea salt to taste, and hot sauce (optional — you might get the idea I like stuff hot!)

Mashed (“Refried”) Beans: pinto beans seasoned with chili powder, cumin, a little soy sauce, and a lot of hot sauce (I’m starting to see a pattern here), then mashed.

Macaroni with Tomato Sauce

020Everyone loves macaroni, but it’s fattening, isn’t it? I mean, you shouldn’t just have a huge container of it at a time (the photo shows four cups’ worth), should you?

If you add in the baby food designed by God for baby animals, then the answer is no, you shouldn’t have it very often (or maybe never at all), because it will contribute to your becoming or remaining sick and fat (or just sick if you have an unusually robust metabolism).

The version shown here, you could eat ’til the cows come home, and unless you’re eating fat (meat, dairy, or oil) in something else, you’ll end up trim, and most if not all of your chronic diseases will start to disappear.

  • 100% whole wheat macaroni (non-GMO)
  • Tomato sauce (contains no oil)
  • Garlic powder
  • Oregano
  • Black pepper
  • Chili powder
  • Hot sauce (if you like it spicy!)
  • Salt? I didn’t add any, because there’s more than enough in this particular tomato sauce

I know, where’s the veggies? Well, while I usually have vegetables with my meals, this one was a quickie, and, since it’s whole grains, it’s full of great nutrition. Delicious!

Too Expensive to Eat Healthy?

save_moneyCan’t afford to eat highly nutritious, all natural, healthful food? Guess what: Jen and I have been saving around $300/month just for the two of us by eating better food! And personally, I’ve lost 10 pounds so far, in just 4 weeks, and my blood sugar is more stable (I have Type 1 Diabetes) and my insulin usage has gone down significantly. We both feel better. And our future hospital bills have just taken a nose dive.

You don’t have to buy tons of organic vegetables and take fistfuls of supplements. This is what we’ve been eating:

  • Brown rice
  • 100% Whole wheat pasta
  • Tomato and spaghetti sauce with NO OIL in the ingredients
  • Red, white, and sweet potatoes
  • Onions
  • Various types of beans (variety is awesome)
  • Fresh fruits (such as cantaloupe and bananas)
  • Frozen vegetables (such as broccoli, brussel sprouts, green peas, various mixed veggies, squash and zucchini, and so-on)
  • Oatmeal
  • Sea salt (for a little bit of seasoning)
  • Various spices (such as oregano, garlic powder, chili powder, curry, etc)

We also get the following, which aren’t cheap, but we (especially my wife) sometimes like to have a bowl of cereal as part of our breakfast:

  • Almond milk (unsweetened)
  • Cereal (read the ingredients carefully! 100% whole grains, no oils, no preservatives, nothing you can’t pronounce or wouldn’t see growing in a field)

We eat as much as we want, and don’t have a calorie ceiling, but a calorie FLOOR (I make sure I never eat less than 2,000 per day, and I’ve eaten as much as 4,000) to make sure our bodies get what they need to burn fat and think and function and to avoid food cravings.

The Vitamin B-12 we take (since we consume no animal products) costs $16 for a 6-month supply.


If you CAN buy a few organic items, some are more important than others. If you can swing the few extra bucks (which you probably can once you stop spending all that money on meat, oil, dairy, and pre-packaged foods), try to get the following organic, since the non-organic versions of these items tend to contain high amounts of pesticides:

  • Apples
  • Bell Peppers
  • Blueberries
  • Celery
  • Cherry Tomatoes
  • Coffee (make sure you’re not adding real or artificial creamer! try almond milk instead)
  • Collard Greens
  • Cucumbers
  • Grapes
  • Hot Peppers
  • Kale
  • Lettuce
  • Nectarines (Imported)
  • Peaches
  • Potatoes (except sweet potatoes)
  • Spinach
  • Strawberries
  • Wine
  • Zucchini

Here are some that are considered “clean,” and if you need to limit the amount of organic food you purchase, here are some you can get non-organic without risk of excess pesticide and herbicide residue:

  • Asparagus
  • Avocado
  • Cabbage
  • Cantaloupe
  • Eggplant
  • Grapefruit
  • Kiwi
  • Mangos
  • Mushrooms
  • Onions
  • Papayas (make sure they’re not GMO!)
  • Pineapple
  • Sweet corn (make sure it’s not GMO!)
  • Sweet peas
  • Sweet potatoes
  • Watermelon

Final Notes

As much as possible, get all the ingredients and make your own food! And when you do buy something already put together, read the ingredients, and don’t buy anything with MSG, oil, casein, isolates, any form of meat or dairy (including fish and eggs), artificial flavors or colors, and any of the things you don’t recognize and can’t pronounce.

By eating this way, your cholesterol will drop, your blood pressure will normalize, your Type 2 Diabetes will resolve itself (sometimes in a matter of days, so beware of taking your medications and injecting insulin!), your cardiovascular issues (including E.D.) will start to heal, your excess weight will start to melt away, and you’ll take yourself off the list of Americans who will end up in the hospital, nursing home, or morgue because they eat the rich western diet.

Here’s to life and wonderful food!

Dining with Rulers

king“When you sit down to eat with a ruler, consider carefully what is before you; and put a knife to your throat if you are a man given to appetite.” (Proverbs 23:1-2 NKJV)

Most of what we eat and with which we fill our tables when we feed others is the food of the kings and queens throughout history — lots of meats and cheeses, and lots of rich, refined foods. It’s like going to someone’s house or… gathering, and discovering they’re serving beer or wine. Is that evil? According to Scriptures, no. But if you are “a man given to appetite” for too much alcohol, you should “put a knife to your throat” so to speak.

Many churches teach and preach that consumption of alcohol is evil, and that if you’re given to alcoholism, but you never drink, you’ll never become an alcoholic. While that reasoning has merit, what about the food of rulers that fills our cupboards and refrigerators, and dominates our social gatherings? Then we pray for our brothers and sisters who are fat and sick from eating and drinking every day and night from a ruler’s table. And if the truth be told, we all are raised to be “men (and women) of great appetite,” partially because we’re eating foods that make us fat and/or sick, while not meeting our nutritional needs.

“Do not be among heavy drinkers of wine, or among excessive eaters of meat” (Proverbs 23:20 KMV). That word translated “meat” is literally “(animal) flesh.” Drinking too much alcohol is listed side by side with eating too much meat. And “too much” and “excessive” are relative terms. It’s possible to drink too much water (although difficult to do), but is too much water the same quantity as too much wine?

Historically, the “non ruler” would eat meat from time to time, but not for breakfast, lunch, and dinner; and meat was given by God for us to eat after the earth’s climate was drastically altered by the flood, and was given as food to replace the lack thereof. We don’t need it for nutrients (even many meat eaters are B-12 deficient, and B-12 supplements are very inexpensive and easy to obtain), and in the quantities we eat it today, it’s killing us.

Just some food for thought.
